Shrimp Tostadas
Combine shrimp, olive oil, chili powder, garlic, and salt in a bowl and set it aside to marinate while you make the rest of the dish.
1 ½ lb shrimp, 2 tablespoons olive oil, 1 teaspoon chili powder, 2 cloves garlic, ¼ teaspoon sea salt, 1 lime
Add the romaine, tomatoes, cucumber, and cilantro to a bowl. Add the olive oil, salt, and pepper and squeeze half the lime juice over the top and mix everything together. Add the avocado and gently mix.
2 cups of thinly sliced romaine hearts, ½ cup cherry tomatoes, 1 mini cucumber, diced, 1 Tbsp olive oil, ¼ tsp sea salt and pepper,¼ cup minced cilantro, 1 ripe avocado such as Hass.
Heat a large pan over medium-high heat. Once it's hot, add the shrimp and marinade to the pan. Cook the shrimp for 2 minutes, stirring a few times. Remove the shrimp from the heat and squeeze half a lime over top.
Pile the salad on top of tostadas then top with shrimp, fresh tomatoes, green onion, and sour cream or creme fresh.
California bruschetta
Heat oven to 400 degrees F.
Brush thinly sliced bread, (at desired thickness), on both sides with 1 tbps of high quality olive oil. Place on large baking sheet. Toast bread until golden, 5 to 10 minutes, turning halfway through.
Mix tomatoes, basil, and garlic in a bowl. Add balsamic vinegar, 2 tsp olive oil, kosher salt, and pepper.
- 1 tbsp extra-virgin olive oil
- 4 roma tomatoes, diced
- ⅓ cup chopped fresh basil
- 2 cloves garlic, minced
- 1-2 medium size Hass avocados cut in to dice
- 1 tbsp good quality balsamic vinegar
- 2 tsp high quality extra-virgin olive oil
- ¼ tsp kosher salt
- ¼ tsp freshly ground black pepper
Spoon tomato mixture onto toasted bread slices and finish with 1/4 tsp of hand crushed finishing salt, such as Falksalt or Maldon salt.
Avocado toast
Find a high quality artisan sourdough bread and thinly slice. Toast to a 8 out of 10 to give it stability for all the wet toppings.
Slice up one avocado in to a bowl, add 1 tbsp of olive oil, 1 tsp kosher salt, 1-2 tsp of freshly squeezed orange juice, then mash in the bowl until partially smooth. Spread across toasted bread. garnish with a small amount of your favorite chili garlic crunch.
Slice half of an avocado in to quarters and stack in rows along the top of the avocado mash to top the bread.
Add quartered cherry tomatoes, everything bagel spice, top with 1 tsp of a good olive oil, a spritz of fresh lemon juice, and garnishing salt to taste.
